Oatmeal Butterscotch Cookies

What you need: 

  • 3 cups 3-minute steel cut oatmeal
  • 1 1/2 cups flour 
  • 1 small package of vanilla pudding powder 
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder 
  • 2 Sticks of Butter (softened)
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • eggs
  • teaspoons vanilla extract 
  • 1 bag butterscotch chips

Directions: 

  1. Preheat your over to 375
  2. In one bowl mix together your dry ingredients (oatmeal, flour, pudding powder, salt, baking soda, baking powder) then set this aside for later.
  3. Cream your butter and then add in your sugar and brown sugar.
  4. Once your sugar is all mixed in, add your eggs and vanilla
  5. Then, about 1/4 at a time add in your dry ingredients. Make sure it is all mixed before adding more.
  6. Finally, fold in your butterscotch chips.
  7. On a greased pan, roll dough into about 1 1/2 inch balls 1 inch apart from each other.
  8. Bake for 11 minutes
  9. Once out of the oven let cool on the pan for about 5 minutes before transferring to a cooling rack.

Recipe Review: 

This recipe is delicious! It is tempting to eat them all right when they come out of the oven because the butterscotch chips are melty and delicious! The steel cut oatmeal gives the cookies a different texture than traditional oatmeal. They have the same flavor as a normal oatmeal cookie, but do not have the oatmeal texture.

We love butterscotch, but if you don’t you could swap the butterscotch chips out for chocolate, white chocolate, or peanut butter chips!

The next day, we put our cookies in the microwave for about 15 seconds and they tasted like they had just come out of the oven!

DIY Christmas Countdown

Our countdown is until Christmas Break, but it is perfect for a Christmas Countdown if you start on December 1st!

Usually for countdowns, I use Post it Notes so that I can pull each one off the wall. Unfortunately, I did not have any green post its, so we improvised by cutting green index cards in half and taping them to the door. Really you can use any paper though! We used green so that it would be festive and look like a Christmas tree!

The holiday drinks are back and do not disappoint. Peyton’s favorite is the Caramel Brûlée Latte and Jess is a poser and is just in it for the red cup.

These may be the best water bottles ever! They’re a little on the pricey side, but they are worth every penny! I always use them to keep my water cold! I’ll put ice in it in the morning and it’ll still be there at the end of the day. Now that it’s cold outside I’ve been using it for my coffee in the morning and have to leave the lid off to cool it off it keeps it so hot! Better than any travel mug I’ve ever had!

3. Chicken Tortilla Soup

We made Mix and Match Mama’s Chicken Tortilla soup and it is to die for! We did not add the half and half, but it was still so yummy! Best part is you throw it in the crock pot in the morning and it’s ready by dinner time!

4. Kettle Corn

We are obsessed with this popcorn! It tastes like it is freshly popped, and you don’t have to worry about your popcorn burning. It is also easier to have a single serving and not eat the whole bag. We got a big bag at Sam’s Club.

5. Less Than a Week Until THANKSGIVING!!!!

I don’t know about you, but we cannot wait until Thanksgiving!! Just thinking about the food is making my mouth water. LESS THAN A WEEK PEOPLE!

Pizza Dip

This may be one of the easiest recipes of all time, and if you are like us, we would do anything for pizza. The finished product is always a crowd pleaser, so if you are looking to bring something delicious to the table, try this out!

What you need: 

8 oz packages of cream cheese (softened)

15 oz cans of pizza sauce (I use Don Pepino)

cups of shredded mozzarella cheese

package of pepperoni

bag of Frito’s scoops

Directions

1. In a 9×13 inch pan spread the cream cheese out into an even layer

2. Then add the two cans of pizza sauce and spread into an even layer

3. Sprinkle the mozzarella all over

4. Arrange your pepperoni all over the top

5. Bake for about 30 minutes at 350 degrees

Let cool and you’re ready to dive in.

If you want to make a smaller portion, you can easily cut this recipe in half and make it in a smaller pan.

Chicken Pot Pie

The phrase “I could eat this everyday” is commonly said in our room after we eat a delicious meal. But this Chicken Pot Pie, we could actually eat everyday. And we may have eaten it for dinner, lunch and then dinner again. We don’t normally do a lot of left overs, but this was too scrumptious to waste!

What you need: 

1 tablespoon butter

1 pound chopped, cooked chicken (click here to see how we cooked the chicken)

2 cups frozen vegetable medley (our mix had carrots, corn, peas, and green beans, but we added extra lima beans too)

1 can cream of chicken soup (we used cream of celery because canned meat freaks Peyton out) 

1 cup milk

1 can biscuits (we used Pillsbury Grands)

Salt and Pepper (S&P)

Recipe Review: 

We LOVED this recipe! We will definitely be making it again! 

We cooked ours for a little longer than the recommended 10 minutes, but we also can never actually tell if our oven is at the right temperature. We just waited until the biscuits looked like they were cooked all the way through,  

Not exaggerating when we say that we ate this for three meals in a row (excluding breakfast) we just reheated in in the oven for about 15 min and the biscuits got nice and crispy again!

    One word: Lifesaving. If you are short on time after dinner due to other commitments, you do not want to be stuck with scrubbing the crockpot at the sink for a long time. And who likes stuck on food?! No one. We really suggest investing in these liners because it gives you one less mess to worry about.

    We are so excited to finally wake up in the morning to frost on the grass. We spend our days in our fall boots and sweaters, and we cozy up on the couch and watch Hallmark movies. What gets better than that?
